Santa Fe Grill Style Green Chile Stew by Juan E. Morales
Ingredients:
2# Pork Shoulder 1 Bay Leaves
2 Garlic Cloves
1 # Hatch Green Chile 1 Jalepeno
1/2 cup Diced Onion
1/2 cup Diced Potato 1/2 cup Diced Tomato
Salt to Taste
Pepper to Taste
In large pot over medium heat warm 2 tp of oil, add fresh garlic and onion sauté for about 2-3 minutes. Add pork to sauté with garlic and onion until brown, approximately 5-8 minutes. Add Chile and tomatoes with 16 oz of water, bring to a boil, cover and simmer low for 30-40 minutes. Add potatoes raise heat to boil, reduce to simmer and cook until potatoes are tender approximately 10-12 minutes.
Santa Fe Grill Chile Relleno Recipe by Juan E. Morales
Ingredients:
3 eggs-separated
1/4tp of salt
Big Jim Chile or Sandia Select
1/2 Cup Cheddar Cheese
1 cup of Flour
1 cup of vegetable oil or Lard
Separate eggs, beat egg white until foamy. Add salt. Continue beating until white and stiff. Heat oil or lard in saucepan medium high heat for frying. Carefully and slowly,( so the white don't fall) stir in egg yolk's into egg whites. Stuff Chile with cheese, roll in flour. Dip in egg white mixture, place in hot oil and fry until slightly brown. Turn over once to complete cooking. Serve hot.
